When I first came across recipes called ‘Buddha Bowls’ I had no clue what they were, or why they are called Buddha Bowls.  I wonder where that name came from?

Anyway, none of that matters.

These bowls are an easy way to add in loads of veggies and get nutrient dense foods into your tummy.  You can add in whatever veggies you like to eat, combine in one bowl, top it with almost anything you would like and you have a really easy, quick, and tasty dinner.

Ideas to help you make a quick one:
– Prep brown rice or quinoa for the week
– Roast veggies ahead of time
– If you don’t want to take the time to roast chickpeas in my recipe below, you can replace with black beans instead (BUT note:  the roasted chickpeas are delicious!!)

– You can top with avocado, salsa, or your own favorite kind of dressing.  I love using this cashew cream.  
– Do you have Trader Joe’s Everything But the Bagel Seasoning available? This is a wonderful topping choice.   I tend to roast whatever veggies are in season for the best bang for my buck.  In season veggies will usually cost less but always have more nutrition packed into them compared to something that is not in season.
