I have said it before and I will say it again.  Potatoes are an amazing thing, and if cooked the right way, they are extremely nutritious and delicious!

These potatoes here are a perfect example.

The potatoes are roasted in a tiny bit of avocado oil, roasted to perfection, and topped with an oil-free herbed pesto that makes this a perfect side dish to any meal – or if you are like my husband, it becomes your lunch.

How to roast the perfect potatoes?

Start with washing and scrubbing your potatoes really well. Once done, make sure the potatoes are dried completely. Wet potato skins steam in the oven while dry skin will roast.  We want these to roast.  Trust me, that crispy skin is going to be worth the extra drying time.

What happens next?

I cut my potatoes in half (honestly to save time) but if you want to chop in small bites you can do that as well. However, I liked the pretty display the potato halves resulted in.

Next, I threw the potatoes in a bowl and added in the avocado oil with a little bit of salt and pepper.  I used my hands and started mixing – making sure everything was really well coated.

The next step is also key:  Lay the potatoes in a single layer, flat side down.   Don’t turn the potatoes at all… This technique will result in crispy potatoes. (YUMMY!)

While the potatoes roast, mix up the herbed pesto.

Details on the herbs:

Rosemary is antibacterial, antiviral, improves blood flow, improves memory (give me more of that), immune system booster, and helps with respitory health. 

Parsley has the power to purify the liver, blood, and kidneys thanks to the combo of vitamins, flavonoids, and nutrients like chlorophyll.  This garnish should be more than just a garnish, which is why I decided to add in some to this pesto.  Eat it up!

Basil is something we typically find in pesto but other than the taste, this is one herb we should eat more of.  Basil has an anti-stress agent to it that helps calm us.   Not only that, basil is amazing at helping combat common colds and the flu.
