One thing I never thought I’d suggest for lunch would be lentil nachos.  BUT here I am, suggesting away.  This tasty recipe came about when I had lentil and bean taco mixture leftover.

I am a big fan of throwing things in a bowl, mixing it up really well, and devouring it.  

Side note:  when I was younger, my food COULD NOT TOUCH other food. Funny how things change?!! Anyone else?

OK, so these nachos. I took leftover cashew cream, leftover lentil and bean tacos mixture, and added in a few extra things and this was the result.  A comforting dish that the meat eaters in your home will even enjoy.

Do you like to plan ahead?

This is how I see this dish going down.  Thursday night is lentil tacos for dinner.  Friday or Saturday lunch would be these nachos.  Leftovers are always perfect and great time saving meal!

Don’t have time to make the cashew cream? Then leave it out and mix in salsa instead or use your favorite non-dairy substitue.

Salsa
