After I made the hemp seed pesto, I started to experiment with it and this sandwich came up for lunch one day. Every bite I took I kept saying out loud…. “Oh my goodness this is so good!” Obviously, I love it otherwise I wouldn’t be sharing it. SO, yes it is simple BUT it is SO delicious!
I don’t want to waste your time, let’s get to the details here!
- First up, find your bread of choice. I use sourdough from time to time if I really want to enjoy my sandwich but this will be great with gluten-free bread or even something softer like a ciabatta roll. Have fun experimenting with your bread choice.
- Next, get those veggies in the oven and roast them. If you have been following my blog for some time, then you know I love roasted veggies! For the veggies, you can either roast them ahead of time or you can roast them and eat the sandwich warm on toasted bread. My favorite veggies to roast are sweet potatoes, bell peppers, and onions but you can use what you have or is in the season when you make this. Then load it up with some other toppings of choice like sprouts, lettuce, or even cucumbers perhaps.
- The finishing touch would be that pesto. Load it up. As much as you feel like eating and layer it on both sides. You can either use a homemade pesto or buy a store bought brand.
This is delicious and so easy to make!
Pro tip: If you are taking this sandwich with you to lunch, lay the veggies on first and then put the pesto in the middle between veggie layers to help keep the bread from becoming soggy.
