I just got off a video chat with a friend and she said, “I don’t know how to have meals without having meat”
She went on to say everything from quesadillas, pasta, and tacos… they all need to have meat or it doesn’t feel like a complete meal.
Can you relate to that?
I told her she is not alone. We have been taught how to have animal products at each and every meal so it makes sense that this is a common concern.
BUT she wanted to eat less meat and was looking for some guidance.
Tacos like this recipe are a great starting point. Even if you think you don’t like cauliflower, cutting it up small and mixing it with the other veggies and loading it up with delicious toppings like avocado cream sauce or cashew cream is a way you won’t miss meat – especially in a taco.
Details of the Cauliflower Taco
Grab your spices, chop your veggies, mix together, and sauté in a skillet until browned. You will then add into your tortilla of choice ( I use corn tortillas), top it with whatever you like. My favorite toppings are pictured; cashew cream, cilantro, green onions, and beans sprinkled on top but you should top it as you please.
That is it.
Simple. Fast. Meat Free. Guilt Free. Delicious. and did I mention FAST.
Serve with chips and guacamole, side of beans, or Spanish rice and you have a terrific meal for a busy weeknight.
If veggies in the skillet are not your thing, roast them for a whole new flavor. Roast at 375 degrees F for 20-25 minutes and serve the same way.
Cauliflower Tacos
Ingredients
Seasoning Mixture
- 1 Tbsp nutritional yeast
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 pinch pepper salt to taste or as needed
Veggies
- 1 whole red bell pepper, chopped into bite sizes
- 1 cup cauliflower, chopped into bite sizes
- 1/2 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
Others
- 1 Tbsp avocado oil
- 6 corn tortillas
- 1 whole avocado as needed
- 1/2 cup black beans optional topping
- 3-4 Tbsp cashew cream or non dairy sauce as needed
- 2 Tbsp green onions, chopped
- 1-3 Tbsp cilantro, chopped
Instructions
- Mix all seasoning mixture ingredients together in a small bowl and set aside.
- Add all chopped veggies into a large bowl and stir. Add in seasonings and mix well with the one Tbsp of avocado oil.
- Add veggie mixture into skillet and cook for 10-15 minutes or until soft.
- Warm tortillas on a seperate skillet before adding in veggie mixture. Top tortillas and veggies with cilantro, green onions, cashew cream, avocado, or black beans depending on prefrences.
