Mashed potatoes are one of those dishes growing up that I looked forward to at every family gathering or with my favorite childhood dinner: fried pork chops with mashed potatoes, gravy, corn, and a roll. This was my favorite meal even up until the point of changing the way I ate. I can still taste that meal even years later because I LOVED it that much! Yummy! BUT the star of the show was the mashed potatoes piled high with lots of gravy.

Did you have a favorite meal similar to that?

I may not eat food like that now but I still have a love for mashed potatoes… potatoes of any kind actually but that is for another post!

Besides the fact that this dish is delicious, the shallots are not as powerful as an onion but with the garlic, they give these potatoes just a little bit of ‘umph’ and will make you excited to have mashed potatoes in your life again if you are like me and thought mashed potatoes had to be made with butter and real milk.

What are the best tips for making creamy potatoes?

There are several different ways to make mashed potatoes. You can use a hand masher, kitchen aid mixer, hand held mixer, or probably a fork if necessary, but whatever has worked for you, keep doing that. Your methods will not change the taste of my recipe below.

However, if you want to know how I made mine, below are some tips to go a long with the recipe.

Details of this recipe

  • I used baby red potatoes over russet or gold potatoes because the red potatoes absorb the flavor of the caramelized shallots and garlic better.
  • Scrub the potatoes well but don’t peel them. The skin holds a lot of nutrients and fiber. Keep them on.
  • Cut the potatoes into chunks about the same size. This allows the potatoes to cook at the same speed.
  • Add potatoes AND THE GARLIC CLOVES to a large pot and cover with cold water. Bring that to a boil all together. Then cook for about 20 minutes on medium low.
  • While the potatoes cook, you will want to cook the shallots according to the recipe below.
  • After the potatoes are soft, let them sit to dry for a bit before adding them into the mashing bowl.
  • Add the cooked potatoes into the bowl you will mash in and mash potatoes gently, for about 10 seconds.
  • The last step is combining everything else and devouring them!

Baby red potatoes mashed with crispy and sweet shallots and garlic mixed with vegan butter and non dairy milk are perfect for your next family dinner.

Equipment

  • Hand held mixer or kitchen aid mixer

Ingredients
  

  • 1 pound baby red potatoes
  • 2 shallots, chopped thin
  • 4 cloves garlic
  • 1/4 Cup Non-dairy milk I used oat milk
  • 2 Tbsp vegan butter
  • 1/2 Tbsp avocado oil Olive oil works too
  • Salt & Pepper to taste

Instructions
 

  • Scrub potatoes clean. Chop potatoes in to an even size and add to a large pot along with the whole cloves of garlic. Cover the potatoes and garlic with cold water and bring to a boil. When water reaches boiling, lower temp to medium-low and cook for 20-25 minutes. You will know they are done by inserting a fork into a potato and checking for softness.
  • While potaotes cook, saute shallots in avocado oil for about 10 minutes or until nice and crispy but not burnt. When done, remove from heat and set to the side.
  • When potatoes are done, drain the water and let them sit for about 5 minutes to dry a bit. After that, mash either with a hand masher or a kitchen aid mixer to break up the potatoes and garlic.
  • Add in vegan butter, non dairy milk, crispy shallots, and salt and pepper. Mix until all lumps are gone.
