Mix all seasoning mixture ingredients together in a small bowl and set aside.
Add all chopped veggies into a large bowl and stir. Add in seasonings and mix well with the one Tbsp of avocado oil.
Add veggie mixture into skillet and cook for 10-15 minutes or until soft.
Warm tortillas on a seperate skillet before adding in veggie mixture. Top tortillas and veggies with cilantro, green onions, cashew cream, avocado, or black beans depending on prefrences.
