I have your back.  I know what you need.  Something quick to put on your table that involves very minimal prep and clean up.

This dish evolved after getting some cherry tomatoes at the Farmers Market and needing to use them in something. Below is what I came up with.

This dish is simple.  Feeds myself, the husband, and a few tiny bites from the kids, and we had enough leftovers for lunch the next day.  Add on a side veggie (my pick: broccoli) and you have a complete meal that is quick for your Monday night ( Or Tuesday, Wednesday, …. Whatever)

Notes about the recipe:

– Use the whole onion.  Just do it, it is much better with it.
– Love garlic?  Go ahead, throw in more J
– Don’t have spinach on hand?  You can use some kale, arugula, a mixture of any kind and it will be good.
– What is pasta water you ask?  Once the pasta starts to boil and soften, that water makes a great water to help bind everything together.  I will get a ¼ measuring cup and fill it up with that water and toss it into my veggies.  Enjoy that startch!
– Don’t skip on the balsalmic glaze if at all possible.  I got this one from Trader Joes and it makes an excellent pizza topping!!! BUT if you don’t have it, you can use a little balsalmic vinegar and it will work.
– If you are not vegan, you can throw on some parmesan cheese on top of your dish.
