If there is any green we go through the quickest in the Castle house, it is spinach.  It is one sure thing I can always get my kids to eat and actually enjoy.  I am not sure what it is they like about this dark green leaf- it is surely not because Popeye ate it because I am not 100% sure they even know who that is- but they go for it at the salad bar all the time.  Whatever the reason, I don’t question it.

Nutritional facts

Spinach is low in calories but is extremely good for us, which means it is nutrient dense.   It is high in Vitamins A, C, and K; High in folate, calcium, magnesium, fiber, and beta-carotene.   For anyone that has cancer, heart disease, obesity, or osteoporosis – spinach is a great weapon.  Hint – that means if you want to create an environment that makes it difficult for those things to grow, eat spinach!

What to look for when buying it

Fresh spinach should be medium to dark green, fresh looking, and free from any signs of decay.  It will be cheaper to buy bundled spinach vs. the pre packaged spinach  found ‘prewashed’.  If buying the bundled spinach, it can be stored loosely for about four days. 

Tip:  Do not wash it before storing as it will cause the spinach to wilt and spoil much faster.

Ideas on how to enjoy it 

1.  Swap out iceberg lettuce for spinach in your salads, on sandwiches or wraps.
2.  Stir fry leaves with a little minced garlic, tiny bit of olive oil, and a few chopped nuts.
3.  Serve any main dish on a bed of spinach.
4.  Add frozen spinach into your morning smoothies.
5.  Add into your spaghetti sauce.
