When I stopped eating dairy, I must admit that one of the things I missed the most was pizza. The gooey, stringy, and greasy cheese on a pizza – YUMM! But I didn’t love how it made me feel and that was strong enough to be ok with not eating pizza.
Then, I started experimenting in the kitchen with other options. I tried vegan mozzarella cheese but I was not too fond of the long list of ingredients so that wasn’t an option for me. I tried different crusts thinking that would make a difference. Basically, I was trying plant-based pizzas in any way possible to fill that pizza void.
The first time I tried this recipe, I was in heaven. It is so delicious and simple. The most time-consuming part is the cashew cream sauce but if you can remember to soak the cashews the night before, you’re golden.
Yes, you need to like onions to like this pizza but I am telling you, try it even if you still eat dairy. It will be a different kind of pizza but you may have found one to add to your menu like I have. I look forward to this pizza and hope you will too.
Tips:
CRUST: Whatever crust you eat will be ok but I enjoy this one from Trader Joe’s. I also like this one found at Sprouts and it comes in a 2 pack- bonus!
SAUCE: I make my spaghetti sauce and save ¼ Cup leftover for another pizza night. You can buy your own pizza sauce but just watch for the added sugars.
CASHEW CREAM: This is the recipe I use and I love it on this pizza!
ONIONS: You gotta go with red onions. Just trust me!
BALSAMIC GLAZE: Don’t skip this part. It is the icing on the pizza. This one is my fav.
Enjoy!
We used the crust you recommended from Sprouts – really good. Thin and crisp! To build the pizza we smeared the cashew cream (I added fresh basil to the batch of cashew cream I made for this pizza) around evenly as the first layer, then the tomato sauce with the other ingredients. Was so yummy! Even the carnivore husband was satisfied by the pizza – he didn’t say anything about the lack of meat! I was floored. Thanks Leah!
Ohh! I love the idea of adding basil to the cream sauce. Yummy!! Thanks for that idea. AND a huge win for the non meat eater liking this!! That is awesome!
Hi! I love the picture, it looks yummy. I would like to make it and I am imagining adding all my favorite toppings too. The only thing I do not see is you mention cashew sauce and how it is time consuming, but there is no directions for making it. I do not see a link for the recipe. Also the pizza shows some globs of white stuff. What is that? Globs of garlic? Garlic would be good. I would personally top with pineapple and green peppers too.
Hi Kathleen, I appreciate the comment, I will be sure to go back and edit the post to make sure the link is clickable for the cashew cream as it was a separate post from another time. The cashew cream is time consuming in that you just have to remember to soak the cashews so that they blend easier – it makes it creamier. The white globs on the pizza are the cashew cream and it pairs so well with this pizza, I highly recommend giving it a try. Thank you so much!
