This is the best vegan lasagna you will make. It is a dish that I crave every week. AND Yes…  It is possible to have a really delicious lasagna without meat and cheese.  What is even better is that this one can come together really quickly if you have everything prepped beforehand.  I don’t like to waste time so let’s just get straight to the recipe.

What Should be Prepped Beforehand?

The cashew cream.  I make this a few days before and use it in our Buddha Bowls, pizza, and then I make sure to save 1 cup of the cashew cream specifically for this.  

You could make the sauce ahead of time, however, I cheat and buy a jar of sauce.  It is up to you.

Details of This Recipe?

  1. I’ll start with the noodles. Anything will do here; Gluten free, whole wheat, ready to bake, or ones you need to pre-cook.  Use the brand you know and love.  If you don’t have a brand you prefer, my suggestion is to use one that is ready to go with no pre-cooking necessary
  2. I already mentioned the sauce and cashew cream above but make sure you have those ready to go. 
  3. Veggies: I used roasted red peppers, sun dried tomatoes, and spinach here for simplicity (and it is extremely delicious this way!) but if those are not your favorites then experiment with what you love. Aim for 1 cup of veggies and 1 cup of greens.
  4. Top it off with the vegan parm for a nice flavor and a bit of color.  You can also use a vegan cheese here if you’d like but watch for crazy additives in those.

Does This Freeze Well?

I have not attempted this so I am not 100% sure, however, I am willing to bet you could.  If you decide to, follow the recipe and just before baking it, cover it well.  Be sure to store in an airtight container and defrost in the fridge before baking. Alternatively, you could make this in the morning or day before, store it in the refrigerator, and then continue bake when ready.  

Do you have a friend or family member that thinksthey can’t have a main course without meat or cheese?  I have a strong feeling that this dish is one they will devour and not even realize that there is not ricotta cheese in here.
