Yes, I live on roots but that doesn’t mean I don’t allow myself some treats every now and then.  Insert these cookies!

These are so soft and delicious but my favorite part of all – very minimal sugar!  I have made these several times and each time they are gone in less than 2 days.

Here is why I love them:
1.  Well, duh; chocolate chip cookies
2.  Sweetened with maple syrup
3.  The kids enjoy eating them.  Bonus!!
4.  If you really want to watch your sugar levels, you could add in cocoa nibs instead of chocolate chips.

Here are some tips to help the process go smoothly.
Almond flour:  Make sure there are no clumps.  If you need to sift it to break up the clubs than do that or use the back of a spoon to push the clumps out.  Otherwise it doesn’t mix well at the end.
Coconut oil:  Make sure it is in a liquid form.  You can melt it in the microwave or stove top but make sure it is at liquid temperature before pouring in.
Flax ‘egg’:  This is an easy step but does slow down the process a bit.  Grab a small bowl, pour in 1 Tbsp of ground flax seed with 3 Tbsp of water.  Let it sit for about 15 minutes to thicken up.  This becomes your ‘egg’.  I do this first while I am getting all ingredients out and by the time I have everything, it is ready.
Measuring:  I will use a Tablespoon to scoop out the dough to help me get even cookies.  That way they bake evenly at the same time.
If you enjoy nuts in your cookies, add in about 1/4 Cup to this mix and you’ll good.
