Have you ever thought about making your own veggie broth?  It is quite easy to do and a great way to use up vegetables starting to go bad in your fridge.  In this recipe, I am sharing a combo that is perfect for healing our guts.

Why would we need to heal our guts? The lining of our intestines is extremely thin and can be affected by many things.  The foods we eat, the toxic pollution around us, the over use of chemicals in processed food and personal care products are reeking havoc on our intestines.

By eating nutrient dense foods that support our digestive system, we can help aid the repair or if anything, not make it worse.

This veggie broth is great at doing just that.

The carrots, celery, and onions are rich in prebiotics that promote the growth of healthy bacteria in the large intestines.

For this recipe I used shitake mushrooms because they are high in zinc and help heal the gut lining.  Other ones you can use, if you can find, include reishi, turkey tail, or cremini mushrooms.

Don’t skip on the seaweed.  I am not a fan of eating the stuff but in this broth it is a great addition for the flavor and the health benefits. Seaweed is known to cleanse the digestive tract.

How to use the broth:
– drink it by the cup full everyday
– use when a recipe calls for any kind of broth
– make a soup with it
– cook rice in it

If you do not have a Crockpot, this can easily be made on the stove top.  Cook it on low for at least 2 hours.   The longer is cooks, the more beneficial it will be.
