Raise your hand if you like chips and salsa!  Thought so… nothing is better than a bowl of warm chips and freshly made salsa.  Yum!   Are you ready to make some?

Here is a salsa with fresh veggies including a red bell pepper. Interesting addition right?!  This is why I added it in.

Red bell peppers provide a high level of Vitamin C, Vitamin A, Vitamin E, and Zinc.  These nutrients are vital for a strong immune system and energy production.  When bell peppers are eaten raw, it can also help prevent constipation.

Details of the Recipe

This recipe is really easy to make.  Throw it in a bowl and use an immersion blender until it reaches desired consistency.  I am the type of person who likes it a bit more liquidy while my husband enjoys is chunkier.  For that reason, I decided to go a bit in between.

Play around with the amounts of cilantro and jalapeno.  The whole jalapeno should be fine – be sure to remove the seeds, as that is where most of the heat comes from.  If you like heat, throw them in with everything else.

As for the cilantro, back to what the husband likes and what I like; he hates cilantro while I LOVE it.  I decided to keep this recipe at a pretty neutral level but feel free to add in more if you are like me and love it too. 

The salsa is so fresh tasting; I think you will like the simplicity of it.  Add it on top of salads, your favorite Mexican food dish, or bring along to your next get together.
