This just might be the simplest recipe and the prettiest on the blog. Something about spiral food looks so appetising to me.
BUT you’ll notice on the blog that I do not include any other spiraled food recipes. That is because I do not own a spiralizer so I cannot recommend a good brand. What I can recommend are the pre-packaged spiraled potatoes like the ones from The Veggie Noodle Co.
**By the way, this is not sponsored, I just like this convenience**. Thank you for making this possible at grocery stores because spiralizing my own food is not something I want to do.
Do you have a spiralizer?
Is that even what they are called?
If you do have one of those things that spiral your veggies, you can follow the recipe the same. The box of spiraled potatoes I bought was a 10 oz. package which I am guessing is equal to one large potato or two small ones. However, the size of the potatoes will not matter.
This is the package I used. You can find it at Target, Sprouts, or Vons here in San Diego
Details of this recipe
- If you want to use spiralized zucchini, butternut squash, or carrots the recipe will be made the same but watch how it cooks in your oven so the veggies don’t get burnt.
- Make the Avocado Cream Sauce ahead of time to save time. This dip can go on everything!
- Your oven may cook differently. After 20 minutes watch the potatoes to make sure they aren’t burning.
- If you don’t want to use avocado oil, another option may be coconut oil or ghee.
- This will serve 2-3 people but I could easily eat it all myself for lunch. You decide 🙂 … I will not judge.
- If you cannot find spiraled potatoes or you also do not have a spiralizer at home, you can alternatively chop sweet potatoes thin and roast for the same time frame.
I look forward to seeing your pictures for this recipe. Be sure to tag me @LivingOnRoots
