Sometimes Brandon (my husband) and I catch a glimpse of loaded fries going past us when we are at restaurants. We both look at each other and give a look of, ‘Oh man, that looks amazing!’
The look doesn’t last long though for me as I am quickly brought back to reality when I remember how I would feel after I indulged in that. I would feel it for the next couple of days. Not worth it for me!
But Brandon might still be tempted. Knowing this I was determined to come up with something that would satisfy his cravings of loaded fries.
Here is what I came up with!
I went with sweet potatoes just because that is usually what we have on hand but if you decided to try it with a russet potato, I am positive you would love it as well.
Of course, I had to put a healthy spin on this by adding in some veggies and using turmeric in the spice mix.
If you ever get that craving for something a bit pub-like, maybe this will fit your needs as well!

Thanks for this yummy recipe. My husband and I usually purchase a box of sweet potatoes near the end of our local farmer’s market the fall. It’s about 3/4 bushel. So I’m always on the lookout for new recipes as that amount of sweet potatoes can seem a bit overwhelming when cooking for just two people. Thankfully, they keep well over the winter and into early spring in our unheated Virginia garage. One thing I have learned is that sweet potatoes can be substituted in most any recipe calling for pumpkin.

I love sweet potatoes too and am always finding new ways to use them. Have you tried making a sweet potato bread? Just like you said- replacing the pumpkin it resembles pumpkin bread so closely. Yum! Hmm, what else.. using the potatoes in curry dishes is always good.
