Avocado toast has become the new brunch dish. I see it listed on a ton of menus these days – which I am grateful for because I love avocado toast. Usually you will see the piece of toast, avocado, and then a fried or poached egg. Simple and tasty. BUT I am also trying to limit my egg consumption.
Due to that, one day I was playing around in the kitchen and came up with this vegan recipe.
Details:
* Sourdough bread! Sometimes I have a craving for regular bread and I eat it when that craving is there. But if you want to stick to gluten free bread, it will work perfectly of course.
* These Chickpeas from Biena are delicious and up the protein in this dish. If you want to roast your own chickpeas you can do so but this package is convienant and they taste delicious!
* Broccoli sprouts are one of the most nutrious things we could eat so it was a no brainer for me to add them in.
* Cilantro is a great addition in my opinion and is a heavy metal cleanser for the body.
* Topping it off with Everything but the Bagel Seasoning pulls it all together.

I have developed quite a fondness for avocado toast as well. I like to use a slice of Dave’s Bread…the thin sliced goodseed variety. For some variety I mash up a hard boiled egg with the avocado from time to time. I also like to add McCormick’s Good Morning Breakfast Seasoning…the Bell Pepper Salsa variety.
